Simple background and contrasting colors are both good ways to ensure your content is readable. Light on light, dark on dark, or certain color combinations should be avoided simply because they are hard to read. If you must use a image background, take time to turn down contrast on it, making it lighter or darker and then using contrasting, bold font. Larger text size will help also. It is far better to save the image for a header or similar and put the text below it. While on the concept of text, make sure you pay attention to spacing because poor choices on spacing will not look like a designer made it.
